Faux Risotto

Found this in a magazine. It sounds yummy!

Serves 6
Cost per serving: $0.77

1 lb Orzo
1 T Unsalted Butter
1 small onion, finely chopped
1 teaspoon dried thyme
1 cup Cream of Mushroom Soup
1 cup Milk
1/3 cup chopped fresh parsley
1/3 cup shredded Parmesan
Dash Ground Pepper

Bring a large pot of salted water to a boil.
Add orzo, cook to al dente, and drain.
In the same pot, melt butter over medium heat, add onion and thyme and cook until softened – about 4 minutes.
Whisk in soup and milk.
Stir in orzo and parsley.
Top with Parmesan cheese and black pepper to serve.
